Selected indigenous yeasts


From the vintage 2018 all Terre di Gratia wines are produced exclusively with these yeasts, which can enhance the link between the territory and the grapes, to obtain a unique wine with a strong identity.



Yeasts are responsible for the alcoholic transformation of grape must into wine.

They are micro-organisms, naturally present in the environment, which feed on the sugars contained in the must, transforming them into alcohol.

As for the vine there are different varieties, called strains, even these adapted to the climate of the area in which they have evolved over time.

That’s why Terre di Gratia has enthusiastically joined a research project for the selection of indigenous yeasts, i.e. evolved in Sicily.
