General information
Syrah is considered the international variety that has best acclimatized in Sicily, in particular in Camporeale. Easy to grow, especially if exposed to the south and on high hills, where the ventilation mitigates the torrid heat. Vinified in steel, it keeps the variety/territory link unaltered.
Harvest period: first ten days of September.
Vinification system: soft pressing and maceration on the skins for 15 days. Vinification and aging take place in stainless steel silos with inoculation of selected indigenous Sicilian yeasts at a controlled temperature for 4 months. Performs malolactic fermentation.
