General information
Perricone is a rather rare autochthonous variety, widespread in western Sicily. Difficult, surly but (also for this) complex and fascinating. Cultivated in dry conditions, with low yields per hectare, it gives life to great red wines with excellent longevity. This wine from Perricone grapes was born from a challenge: to demonstrate that it is possible, with large grapes, to obtain a great rosé, fresh and pleasant, but with a good structure. We then extract the must of our best grapes, after a few hours of maceration, and we vinify it in white, obtaining an intense and fragrant rosé, brilliant and highly combinable
Harvest period: first ten days of October.
Vinification system: cold maceration for one night followed by soft pressing; inoculation of selected indigenous Sicilian yeasts and vinification and aging in stainless steel silos at a controlled temperature for 5 months. Malolactic fermentation follows
Tasting notes
Visual exam: The wine is limpid, with a cherry-pink colour, and quite consistent in swirling.
Olfactory test: Notes of fruit such as wild strawberry and pomegranate to which are added hints of rose, blood orange and pink pepper.
Taste-olfactory examination: The wine is dry and offers excellent freshness and good sapidity. The persistence is remarkable and the fruit notes and a hint of red bitters return.
